Is the “thai kitchen” brand curry paste good enough? Haven’t tried much of that brand other than fish sauce.

**Ingredients**
4 bone-in, skin-on chicken thighs, patted dry with paper towel
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 garlic clove, minced
2 tablespoons red curry paste, or more to taste
1 (13.5-ounce) can unsweetened coconut milk
2 tablespoons fish sauce
1 lime, juiced
1 teaspoon brown sugar
1 lemongrass stalk, cut into 3-inch pieces
1 red bell pepper, cut into ¼-inch-thick slices
1 cup snap peas
2 tablespoons chopped fresh cilantro, chopped
**Preparation:**
Preheat oven to 400°F (200°C). Season the chicken thighs with salt and pepper.
Heat a cast-iron skillet over medium heat. Sear skin-side of thighs in skillet until skin is deep golden brown and crispy, 5 to 7 minutes; transfer chicken to plate.
Drain all but 1 tablespoon fat from the skillet and return to medium heat. Stir the garlic and curry paste together in the skillet and cook until fragrant, 30 to 45 seconds.
Add the coconut milk, fish sauce, lime juice, brown sugar, and lemongrass and stir. Bring the liquid to a boil and reduce heat to medium-low.
Return chicken to the pan, skin-side-up, keeping the crispy skin from getting wet. Scatter the pepper slices around the chicken and push to submerge in liquid.
Transfer the skillet to the preheated oven and bake until a probe thermometer inserted at the thickest part of the thigh registers 165°F (75°C), about 20 minutes. Transfer chicken to a plate and tent with aluminum foil to keep warm.
Return the skillet to the stovetop over medium heat. Stir the snap peas with the pepper mixture and simmer until the sauce has reduced slightly and the snap peas are crisp-tender, 3 to 5 minutes.
Return the chicken to the skillet and garnish with cilantro to serve.
