You want to fold the egg whites as few times and possible when integrating the mixtures, having a few streaks here and there will be better than fully incorporating everything.
Any time you’re making an omelette, use room temperature eggs. Europeans often don’t refrigerate their eggs and so that step is often left out of recipes. Americans do refrigerate. So leave them out for a little bit before starting.

Pitta_: So i saw this video, but it didn’t have an included link to bon appetit for a recipe, and I couldn’t find a recipe for it anywhere on their site. It looked too delicious not to share, so I just sort of made a better-than-average educated-cook guess as to the process.
**Ingredients**
* 3 large eggs
* butter
* pinch salt
* pepper to taste (op addition you can’t have eggs w/o pepper come on)
* chives if u want
**Process**:
Separate eggs. Beat the yolks together until smooth. In a separate bowl add a pinch of salt to egg whites and whip until stiff peaks form. DON’T GET ANY YOLK IN WITH THE WITES.
Add half of the egg whites to the yolks, and mix to combine. Add the rest of the whites to the mixture and gently fold to combine.
Melt a pat of butter (half a tablespoon or so) to a non-stick omelette pan set over medium-ish heat. When it’s nice and sizzle-y add the whipped eggs and top with 1/4 cup or so grated cheddar cheese. Cover, and cook for three minutes, or until the bottom of the omelette is delicious n golden brown.
Carefully fold in half. Top with more butter, fresh black pepper, and chives.

hibarihime: Every since I saw this on Shokugeki no Soma (Food Wars for those of you haven’t seen or don’t know about the anime that revolves around cooking ). I’ve always wanted to make this since seeing the fluffiness of it just made my heart go wild from how delicious it looked.

Skin969: I make this kind of omelette quite a lot. I just whisk the 3 eggs whole together until they get light and airy not sure if separating will change taste/texture but they certainly look the same.
