Sauté 1 + 1/2 white onion, with garlic clove in grass fed butter and olive oil – 12 mins. Peal and chop carrot and sweet potato, then add to the pot. Sauté for 10 mins. Add stock of choice. Fill with boiled water from kettle, just enough water to cover all veg then let simmer for 15 mins. Blitz and served with toasted pine nuts, extra virgin olive oil and parsley. Season and serve.
