Zarathustra412: There was a little Slovenian Club that my grandfather helped manage when I was young. That was where I first fell in love with buffalo wings. They had a sweet and spicy sauce– it was amazing– and I could never figure out what the ingredients were.
I stumbled upon the answer years later: it was basically buffalo sauce with a dash of honey. If you’re ever looking for a sweet little twist on buffalo wing sauce, give the honey a try! I can’t make wings without it anymore.

I’ve tried tossing them in baking powder before baking (no salt and no fridge time) and it worked pretty well, but those were with fresh wings. I have frozen wings that I plan on thawing and cooking on Wednesday.

The_Pooter: Helps to put the wings in a steamer basket and steam them for a while before seasoning and baking. Releases a layer of fat between the meat and skin, causing it to be crispier and gives more a more cohesive bite without sliding off and separating.

Have_an_upvote_maybe: I haven’t seen anyone mention baked wings done by Alton Brown! This is the only way I do wings now. I find them to be really crispy and quite delicious. The difference is he steams the wings first and it doesn’t require any coating.
I found a copycat version for hot sauce (Buffalo Wild Wings; spicy garlic and Caribbean Jerk) from Blendtec that is quite delicious and really easy to make. I use this sauce frequently for other chicken meals like grilled chicken salad.

zuppo: As a Buffalo, N.Y. native, idk how people can fuck up chicken wings so much. First off, u don’t put any form of coating on the chicken. This is a huge misunderstanding around the country and where they get it wrong from the beginning. Second, you deep fry. No execptions. This is what gives you the crisp crunch. I prefer extra crispy but that’s preference. Finally, the sause. This video got it mostly right ingredants wise (sause is always to taste) but you place mixture in bowl and toss, not dip/roll. This gives an even coating without soaking the sause and causing the wings to get soggy. Enjoy with blue cheese and celery. Don’t get me started on how people fuck up Pizza as well. End rant

Also put them back in the oven for 6-8 minutes after covering in sauce to get a perfect baked glaze, an they are crispier.
livevicarious: Soon as he chopped off the ends of the wings I flipped off the screen. These are my favorite part. Gnawing off the crispy bits! Also easier way is to skip the flour and just broil them hot and fast. Crispy skin like frying but no oil needed.

If your wings become soggy afterwards it means you put too much sauce on them. It’s quite a simple process that much of the world does not understand…..
