Ingredients
2 Lbs Sirloin or Skirt Steak cubed
Salt
Pepper
1 tbsp ground chipolte pepper
6 roma tomatoes diced
2 jalapenos diced
½ cup chopped cilantro leaves
1 large onion minced
1 lime
1 15 oz can of black beans drained
1-2 sliced bacon chopped
1 package of tortillas for chips
8 oz or more of chedder and monterey jack cheese shredded
1 avocado
sour cream
pickled jalapenos
Instructions
Cube steak and toss with salt, pepper, and chipolte powder
Cook steak in smoking hot pan till browned, alternatively sous vide steak before searing in pan
For Pico De Gallo mix chopped tomatoes, jalapenos, cilantro and ½ of the large onion along with the juice of a lime and salt to taste
For black beans, in a pan cook bacon till crispy and the fat has rendered out
Then add ½ of the large onion and cook till onion has browned
Add drained black beans and heat through
Quarter Tortillas to chip size
In a deep fryer or wok heat oil
Test will one chip to see if the oil is hot enough
Working in batches add tortillas to hot oil and cook for 2-3 minutes
Remove from oil and drain on paper towel or wire rack to get rid of excess oil
Sprinkle salt onto the chips
To assemble in a oven safe container layer chips, black beans, steak, cheese, more chips, more black beans, more steak, more cheese
Place in preheated 450 F oven till cheese has melted about 10 minutes
Turn on the broiler on the last few minutes to caramelize the cheese
Top with smashed avocado, pico de gallo, sour cream, and pickled jalapenos

deatoai: I love evenly coating my nachos with sour cream. I hate using a spoon to serve it as I get those big blobs. So what I do is spoon some into a sandwich Baggie, then make a small cut on the corner and pipe it like a baker! Bam, evenly coated!
karazi: Looks delish; only change I would make is instead of making pico de gallo and smashed avo…I would just make guac and call it a day, more or less combining the two things.
