Ingredients
1 tbsp Real Olive Oil
3 Garlic Cloves chopped
1 Pint Grape Tomatoes
Salt to taste
2 Tbsp Balsamic Vinegar
1 French Baguette Roll sliced
Ricotta Cheese
Instructions
In oven proof pan heat olive oil on a medium heat
Add garlic cloves when hot
After a minute and the garlic is fragrant add grape tomatoes
Season with salt and mix after a minute or two in the garlic infused oil add balsamic vinegar
Place in oven at 325 F or on a low heat on the stove for 20 minutes till sticky
While that is cooking toast baguette on a pan with olive oil or in a toaster
Spread ricotta cheese on the toast and spoon over tomatoes and some of the balsamic reduction

timtime321: I love making a modified version of this. Make some Crostinis instead of toast, put a light layer of ricotta cheese on top, cut a bunch of baby tomatoes in half and throw them in the oven/toaster until they have shriveled. Place each half baby tomato on top of the crostini and ricotta cheese, and make sure to press down a bit. Delicious!
