zym4ik: Nutritious and delicious salad Olivye (Russian Potato Salad) which we are used to see on our holiday tables, has already become a symbol of New Year. Every housewife has her own signature recipe how to make it. It can be cooked with boiled chicken, beef or tongue. Some people add boiled carrot, fresh apple, pickled or fried mushrooms. Today we will cook сlassic Olivye salad to a popular recipe with some doctor sausage which has become a classical one.
**Ingredients**
Onion 1 pcs
Cooked sausage 600 g
Potato 6-7 pcs
Egg 6 pcs
Pickled cucumbers 3 pcs
Canned green peas 1 pcs
Salt – to taste
Black pepper – to taste
Mayonnaise 100 g

**Steps**
1. Pulp onion, wash it and dice it into small pieces.
2. Take off casing from cooked sausage and dice it into medium pieces.
3. Wash and peel potato. Boil vegetables in salty water until done. Take potatoes out of the water and cool them down and dice the same way as sausage.
4. Boil eggs for 10 minutes to get yolks completely done. Cool eggs down, shell and dice them.
5. Peel pickled cucumbers to make them tenderer. Dice them and squeeze extra juice.
6. Open one can of canned green peas, drain them with a sieve. In a bowl combine all cut ingredients: onion, sausage, potato, boiled eggs and cucumbers. Add green peas.
7. Season the salad with some salt and black ground pepper. Dress your salad with some mayonnaise and mix it.
8. The salad is ready. Let it infuse and you can serve it.

loupgarou21: I wasn’t familiar with doctor sausage (Doktorskaya kolbasa) so I looked it up. It looks like it has a similar texture to balogna, but is a bit leaner, and made with a mixture of beef and pork. It also looks like cardamom or nutmeg is used in the seasoning.
What is the size of a can of green peas, around 500g?
divawife: Love this. In Uruguay (where I was born) we eat a very similar thing and it is called Ensalada Rusa or “Russian Salad”. It looks delish!
