2 1/4 cups flour
1 tsp baking soda
1 tsp baking powder
1 1/4 cups sugar
3 eggs
3 tbsp butter
1 tsp vanilla
1 tsp lemon extract
1/2 cup lemon juice
1/2 cup buttermilk (or vanilla yogurt, kefir)
Zest of 1 lemon
Bake at 350F for 45-50 minutes
Turn cake out onto a rack while it is still warm. Cool loaf completely before glazing.
Glaze:
1 cups powdered sugar
2 tbsp lemon juice, plus a little extra if needed for desired consistency

JipJipJooray: I’ve tried this recipe multiple times (https://www.reddit.com/r/GifRecipes/comments/5qvtin/copycat_starbucks_lemon_loaf/) and if they’re anything alike, it tastes amazing but make sure not to leave off the icing, or it tastes very blandish. Like a plain lemon donut without glaze.
ryeguy: As someone who doesn’t bake a ton, why are the ingredients added in this order? Why not just add in all the liquid ingredients and then start adding in the solid stuff?

DevoidSauce: I thought that adding actual lemon juice actually destroys the gluten bonds, making it less of a sponge cake and more of a crumbly, tight texture. Would lemon extract be better?
