rspunched: As someone who has cooked tofu for decades, don’t simmer it. Coat the cubes in coconut oil and bake it til golden brown. The difference is night and day.
noavocadoshere: this definitely looks great & so vibrant in color! i’ve never had mango in tofu but i’ll give it a shot after this, esp since there’s nothing like warm tofu over a bed of rice, so comforting for as simple a dish as it is. thanks for sharing! 🙂
