INGREDIENTS
6 large or 8 small bell peppers
1 large onion, diced
3 small zucchini, peeled and diced
3 medium carrots, peeled and diced
1 cup low-sodium vegetable broth
3 cups cooked brown rice
5 tablespoons tomato paste
¾ cup fresh parsley, chopped
¾ cup fresh dill, chopped
1 lemon, juiced
¼ teaspoon pepper
½ teaspoon Herbamare or salt
kurlash: Rice will be overcooked. This is not for me.
A similar good receipt that i like, is without rice but with grind meat, bread crumbs (+ vegetables and spices etc or an egg also).
Better with sweet horn peppers

You can substitute ground lamb or Greek or italian sausage for the chicken, or just put in more cheese and olives if you don’t eat meat.
