quarkibus: Please wait for the oil to be hot before tossing whole spices in. They’ll sputter quickly so have onions ready. Salt the onions a little so they’ll cook faster. Can add peppers here instead of roasting for single-pot cooking. Add tomatoes and salt here too. Salt a little every time you add something to the pan to bring flavors out. Add powders at this stage, especially turmeric, to avoid burning. You can add protein at this stage (firm tofu, paneer, cooked chicken…) Also, any oil will do, tbh. You’ll know the masala is done when you see specks of oil floating on top. Stir often to prevent the food from sticking to the pan. You could add raw pasta and water to this pot and cook till it’s done. It’ll be soupy if you add more water than is needed, but it’ll be cooked and it’ll taste good. If too spicy, mix in a spoon of yoghurt (bonus creaminess).

* Pinch sea salt
#### For the curry:

* 2 onion roughly chopped
* 1 tsp turmeric
* 2 tsp Garam Masala
* 1 tsp cumin seeds
* 1 tsp ground coriander
* 1/2 tsp fenugreek
* 1 green chilli finely chopped
* 3 cloves garlic minced
* 1 knob ginger peeled and grated
* 2 tbsp Coriander stalks finely chopped
* 6 tomatoes chopped roughly
* 125 ml water
* 1 tsp sea salt
* Twist black pepper
* 100g frozen peas
