Pretty good otherwise; wouldn’t cooking the eggs both sides cause the yolk to harden? Wouldn’t poached eggs work better?

walaska: It’s similar to what i make every saturday morning, although I only very rarely french toast it out of laziness and because fried egg is going in anyway. You had me until you flipped those eggs. Let them be, so that they explode into yolky goodness when biting/cutting into the sandwich. A slice of cheese, or grated cheese on top in the oven wouldn’t hurt. Personally, I would add some chives at the end. A light drizzle of sriracha or even ketchup on the bacon is pretty godly as well (just a tiny bit to balance out the fat, seriously do not overdo it though).
Other variations I’ve made have included lamb’s lettuce on top of the egg, which brings a nice peppery salad flavour, very ripe avocado, red onion instead of chive, pouring over maple sirup, real honey or sweet chili sauce, replacing the fried egg with feta omelette, or with very ripe and sweet banana or leftover mac and cheese.
Either way what you did looks delicious.
