I_That_Wanders: Needs to step up the cucumber game. I use a coarse microlplane-style grater rather than the box grater, the texture is a zillion times smoother in the finished product. Also, squeeze it in a tea-towel (or a couple of paper towels) and set the towel in a collander over a bowl to drain. If it’s not so wet, you won’t need to thicken the yogurt with quark (or cream cheese).

**Ingredients**
400g Quark
400g Greek Yoghurt
2-4 cloves garlic
1/2 Cucumber
Antipasti Oil
Salt
1/2 Fresh Lime
Welcome to the next level of Tzatziki. Learn how to make an even better Tzatziki than before.
**Steps**
**1.** Shred 1/2 Cucumber, salt it and set aside for about 10 minutes to get out the water.
**2.** Mix the quark and the greek yoghurt with 2-4 chopped cloves of garlic and some oil from antipasti. The more oil you put in, the more creamier it gets.
**3.** Squeeze out the remaining water from the cucumbers and mix it to the other ingredients.
**4.** Check for salt and chill in the fridge for at least 1 hour.
**5.** Ready to serve to Gyro, Potato Wedges and even inside Wraps.

shayera0: I usually use 10% greek yoghurt (no draining) instead of this half/half stuff, but that’s just my version..
I haven’t tried using antipasti oil instead using a good evoo, but it looks like it needs trying 🙂
Also, i can recommend zest of lemon, a whole cucumber (or more) to the shown amount of dairy, and a wee bit of honey..
But a very nice tzatziki nonetheless
