HanaWong: Pork-wrapped-asparagus
Those are NOT bacon. I repeat, those are NOT bacon.
They are thinly sliced pork belly, they do not crisp up as much as bacon when you pan fry them.
**Ingredients (for 2):**
– 250g asparagus
– 300g pork belly slices (thinly sliced)
– 2 Tbsp mirin
– 2 Tbsp soy sauce
– Water
– salt & pepper
**Instructions:**
1. Prepare the asparagus. Cut off the toughest part of each asparagus. Then peel the bottom part.
2. Boil some water. Throw in a pinch of salt. Boil the asparagus for 1-2 minutes. Make sure the water level is high enough to cover all of them. Then transfer them onto a plate and wait until cooled down.
3. Use paper towel to pat dry the asparagus, then the fun begins.
4. Wrap the pork slices around the asparagus. Make sure to roll it as tight as you can, or else it may fall off during cooking. Use 1-2 slice of pork for each asparagus. Leave the tops and ends of the asparagus exposed to make it look more appetizing.
5. Sprinkle some salt and black pepper on the wraps. Pan fry them on medium-high heat. Cook until just slightly browned. Then turn to low heat. Pour mirin, soy sauce, and 3 Tbsp of water into the pan. Make sure all the wraps are coated with the sauce. Put on the lid and cook for 4 minutes.
6. Take off the lid and turn to high-heat. Cook until all the liquid evaporated and the meat beautifully browned.
7. Transfer them on a plate. Cut each piece in half and serve. It goes pretty well with rice.
