mynameisandong: Summer has officialy arrived, and there is no better season to enjoy a refreshing Vietnamese Cold Summer Salad! It’s inspired by the classic Bun Chay, but with a little twist it feels like summer rolls in a bowl. Best thing: the recipe is super easy.
This is my base recipe, you could add any kind of toppings. Fried Tofu or Lemongrass BBQ Pork would be my favorites. Hope you guys enjoy it as much as I do!

**Ingredients** for 2 persons
2-4 bundles of dried Rice Vermicelli or Mung Bean Vermicelli
1 carrot, julienned
5 slices daikon raddish, julienned
2 tsp salt
1 Tbsp sugar
2 Tbsp rice vinegar
1/2 lime, juiced
water
1/2 jalapeño or 2-3 green bird’s eye chilies, minced
2 cloves of garlic, sliced
1/2 lime
1 Tbsp sugar
1 Tbsp vinegar
3 tsp fish sauce fish sauce (or more if you like)
3 Tbsp water
1 finger length piece of cucumber, julienned
1 handful mung bean sprouts
spring onions, cilantro, thai basil to taste
1 Tbsp toasted sesame seeds
1 Tbsp toasted peanuts
Sriracha for garnish
**Method**
1. Add dried noodles to a tray and add boiling water. Let soak.
2. Julienne carrot and raddish. Add to container with lid.
3. Add salt, sugar, vinegar, lime juice and water until carrots and raddish are submerged. Close container and set aside.
4. In a bowl, combine minced chili, garlic, lime, sugar, vinegar, fish sauce and some water (2-5 Tbsp, according to taste). Stir well.
5. Remve cucumber core, julienne.
6. Wash bean sprouts.
7. Wash and chop herbs.
8. Grind sesame seeds and peanuts in a mortar.
9. Rinse noodles well under cold water.
10. Top with pickles, cucumber, bean sprouts, a few tablespoons of sauce, herbs, sesame peanut powder, and Sriracha to taste.
Add Tofu or meat if you like!

KindInvestigator: YUM! Delicious! I might try a lower carbohydrate version for my diet using zucchini or cucumber noodles instead of rice. I also love nam pla mixed with sriracha over this. I think I have my lunch planned for tomorrow! Thank you for posting!!
