mynameisandong: I’m really starting to get into cold noodles this summer! And what could lend itself better to this style of cooking than the intense yet super refreshing flavors of Korean Cuisine.
There is this classic dish in Korea called Jaengban Guksu, in which chopped veggies and buckwheat noodles are presented on a platter and combined right there on the spot. I decided to keep the main idea but make things a bit simpler by presenting it in a bowl!
Buckwheat noodles (soba) are not everyone’s favorite, but especially when they’re cold, the nutty aroma really shines and brings fresh ingredients such as cucumber to life. And that Gochujang based sauce… Do I need to say more. Try it and let me know what you think guys!

**Ingredients** for 2 persons
* 3 portions of buckwheat noodles (soba)
* a drizzle of sesame oil
* 1/2 apple or asian pear (nashi pear)
* 1/4 thumb of ginger
* 1 shallot
* 2 cloves of garlic
* 1,5 Tbsp Gochujang
* 1 Tbsp light soy sauce
* 2 tsp sesame seeds
* a few twists of black pepper
* drizzle of rice vinegar and sesame oil (optional)
* 1/2 apple or asian pear (nashi pear), julienned
* 1/3 of a cucumber, julienned
* 1/2 carrot, julienned
* 1/2 shallot, julienned
* 3 slices of daikon raddish, julienned
* 1 thin piece of watermelon, julienned
* 1 small handful of mung bean sprouts, washed
* ice cubes, sesame seeds, chopped spring onions for garnish
**Method**
1. Boil buckwheat noodles (Soba) around 3-4 minutes or until al dente.
2. Cut apple, ginger, shallot and garlic in rough chunks, place in food processor.
3. Add gochujang, soy sauce, sesame seeds, black pepper, rice vinegar and sesame oil.
4. Blitz until smooth, around 1 minute. Add some water if needed!
5. Julienne remaining apple, cucumber, carrot, raddish, watermelon; wash mung bean sprouts.
6. Give your noodles a quick rinse under cold water, then add to a bowl.
7. Assemble your ingredients on top, make it pretty! Add a very generous amount of sauce to your liking.
8. Top off with 3 ice cubes, a few sesame seeds and sliced spring onions.
9. Yum!

kalamanudes: The ice cubes are such an interesting addition!! I’ve never seen that before. I’m assuming it’s to keep the dish cold, and it sort of ends up creating a sauce when they melt?
