Beer & Balsamic Short Rib Melt
INGREDIENTS
* beef short ribs – 3 lbs.
* salt – 1 tsp.
* pepper – 1/2 tsp.
* red onion – 1-sliced
* garlic – 2 cloves-sliced
* beef broth – 1 cup
* brown ale – 12 oz.
* balsamic vinegar – 1/4 cup
* brown sugar – 2 Tbsp.
* bay leaves – 2
* sour dough bread
* sliced havarti
* butter
INSTRUCTIONS:
1. Season short ribs with salt and pepper.
2. Thinly slice red onion and garlic cloves, and place them in the bottom of slow cooker.
3. Add broth, beer, vinegar, brown sugar, and bay leaves.
4. Put short ribs on top and sprinkle sliced garlic on top.
5. Cover and cook on low for 8 hours.
6. Heat skillet or grill pan to medium-low.
7. Butter both slices of sour dough.
8. Place a slice of havarti on the un-buttered side.
9. Shred enough short rib meat to cover cheese.
10. Spoon a little cooking liquid onto short rib.
11. Lay another slice of havarti on top, and cover with the other slice of bread.
12. Place in the skillet and cook until bottom layer of cheese is melted and bread is golden brown.
13. Flip over and cook the other side until it’s melted and brown as well.
I like to place a skillet on top of the sandwich to press it down while cooking.
