Tonezinator: I need to say I’m a chef or else I get down voted for fixing these recipes… That potato is seriously undercooked. But if you REALLY want to make this, Core it out, put some Olive oil on it and bake it empty for 25min. Then carefully add the filling (I recommend two small spoons) and bake again for another 25min. Should be soft and cut easily like a roast potato.

evildrew: If anyone remembers Pizzatatoes from Round Table Pizza, those were potato shells with pizza toppings. One of my favorite foods that has virtually disappeared. Very similar to this. Amazing with ranch or bleu cheese dressing.

IamHighVoltage: The way this is made the second bite is just potato. It would be better if made with mini potatoes cut in half and hollowed out a bit. That way it is a 1 bite hors d’oeuvre. Or as a filled potato skin as others have mentioned.
