Some might call it a pizza, others might call it flatbread. I don’t care what you name it; it’s delicious.
INGREDIENTS:
balsamic vinegar – 1/2 cup
light brown sugar – 2 Tbsp.
butter – 1 Tbsp.
olive oil – 1 Tbsp.
garlic cloves – 2
heavy cream – 1 cup
crushed red pepper
parmesan cheese – 1/4 cup-grated
mozzarella cheese – 2 cups-shredded
prosciutto – 3 oz.-thinly sliced
goat cheese – 2 oz.
pizza dough – 1 lb.
canola oil – 2 Tbsp. (divided)

DIRECTIONS:
Balsamic Glaze:
Stir together balsamic vinegar and brown sugar in a small saucepan. Bring to a simmer and let reduce for about 10 minutes. It should reduce by half and coat the back of a spoon. (You could also use store-bought balsamic glaze.)
Parmesan Cream Sauce:
Place a pan over medium heat and melt butter and olive oil. Add 2 whole garlic cloves and infuse the oil and butter for 3 minutes. Add a pinch or two of red pepper flakes and stir. Slowly stir in cream. Let reduce for 5 minutes or until the cream has thickened. Turn off heat and stir in parmesan cheese.
Pizza:
Preheat oven to 500F. I’m using a 9 inch skillet, so this recipe will make 2 pizzas. Divide the pizza dough in half. Sprinkle flour on your work surface. Work the dough by pressing, stretching, and rolling into about an 11 inch circle.
Heat 1 Tbsp. of canola (or neutral cooking) oil in skillet to medium-high. Place dough into skillet and press dough up the sides, being careful not to burn your fingers on the skillet. Once the dough has started to bubble, you’re ready to build your pizza. Spread half of the parmesan cream sauce on the dough. Sprinkle 1 cup of shredded mozzarella over the sauce. Tear half of the prosciutto into smaller pieces and distribute evenly on top of cheese. Crumble 1 oz. of goat cheese on top. Place in oven for 10-15 minutes, until cheese is bubbly and crust has a nice char on it.
Allow to cool for a few minutes. Drizzle on balsamic glaze to your liking. Finally, tear some fresh basil over the top for garnish. Repeat process for remaining dough and ingredients.
soapbutt: This mostly looks really tasty and something I would eat, but what’s right the whole cloves of garlic and not crushed up?
Also, it wasn’t entirely clear, but it looks like you heat the pan before you dough in? I’ve done that my cast irons before, it works great.
