INGREDIENTS:
corn – 4 ears
mayonnaise – 1/4 cup
Mexican crema (or sour cream) – 1/4 cup
granulated garlic – 1/4 tsp.
chili powder – 1/4 tsp. (+ more for garnish)
lime zest – from 1 lime
Cotija cheese – 1/4 cup-crumbled (+ more for garnish)
salt – 1/2 tsp.
cilantro – 1/4 cup-chopped
lime wedges
DIRECTIONS:
1. a bowl, combine mayo, crema, lime zest, granulated garlic, chili powder, 1/4 cup of Cotija cheese, and 1/2 tsp. of salt. Set aside. Preheat grill to high.
2. Shuck corn by removing husks and silks.
3. Grill corn for 10 minutes, rotating them every few minutes to cook them evenly.
4. Remove corn from grill and place on a sheet pan.
5. Immediately slather crema mixture all over each grilled corn cob.
6. Finish by topping corn with extra Cotija cheese, chili powder, and cilantro. Serve with lime to squeeze over the top for a nice zing.
