Ingredients:
2 Cups of Cake Flour
3 Tbs of Sugar
2 1/2 tsp of Baking Powder
1/2 tsp of Cinnamon
1/4 tsp of Salt
3/4 cup of Milk
2 eggs
2 Tbs of Melted Butter
1 tsp of Vanilla Extract
4-6 peaches, peeled and finely chopped
Instructions:
1) In a large bowl, whisk together the flour, baking powder, salt, cinnamon and sugar. Add the eggs, milk, vanilla and butter and mix everything together until combined.
2) Fold in the chopped peaches, then set the batter aside. Preheat the oil to 370 degrees F.
3) Drop spoonfuls of batter in the hot oil and cook the fritters for 4-5 minutes depending on the size of your fritters or until golden brown on both sides. Drain fritters on paper towels and set aside.
4) To make the glaze, whisk together the powdered sugar and water until desired drizzling consistency. Drizzle your fritters with the prepared glaze and enjoy!
