**Ingredients**
*4 Pounds of tomatoes
*6 Cloves garlic
*2 Yellow onions
*3 Stalks celery
*2 15oz cans of tomato sauce
*2 Tbsp salt
*8 Tbsp basil
*1 Tbsp oregano powder
*3 Tbsp Parsley
*2 Tbsp dry sherry
*3 Tbsp olive oil
*2 Tbsp basalmic vinegar
**Directions**
*Cook tomatoes 10-15 hours in a crock pot
*Process onion, garlic, and celery to paste consistency in food processor.
*Sweat C.O.G.
*Puree tomatoes and push through fine mesh with a spoon and discard skins and seeds.
*Add all other ingredients and stew for 5 hours or until reduced by half.
**Notes**
*Add hot sauce or peppers for a bit of spice.
