**INGREDIENTS:**
SAUCE:
– Soy sauce 200ml
– Mirin 20ml
– Sake 20ml
– Vinegar 20ml
– Kelp 3g
– Niboshi (Dried Sardines) 5g
FLAVORED OIL:
– Salad Oil 100ml
– Bonito Flakes 10g
SOUP:
– Niboshi 50g
– Kelp 6g
– Bonito 15g
– Water 500ml
– Ice 400g
– Ramen 100g
TOPPINGS:
– Two Slices of Chashu (Braised Pork Belly)
– 1/2 Boiled Egg
– Nori 1/2 sheet
– Bamboo shoots to taste
– Green onions to taste
**DIRECTIONS:**
1. Make the sauce: Put all the ingredients in a pan under medium heat. Remove from heat once boiling.
2. Make the flavored oil: Put all the ingredients in a pan over medium heat. Remove from heat once you can smell the bonito.
3. Make the soup: Put ice water, kelp, and boiling water in a pot and heat it over medium heat. Immediately before boiling, turn off the fire and add bonito. Boil for 3 minutes with a low heat.
4. Pour 2 tablespoons of sauce, 1 tablespoon of oil, and 300 mL of soup into a boil. Then add the cooked ramen.
