2 pounds sweet potatoes, peeled and sliced
1/2 cup butter or margarine
3 large eggs
1 cup sugar
1/2 cup sweetened condensed milk
1/2 cup evaporated milk
1 teaspoon ground nutmeg
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 pie crust blind baked and cooled
OR
You can use a frozen pre-made pie crust
Step 1
Cook sweet potato in boiling water to cover 30 minutes or until tender; drain.
Step 2
Beat sweet potato and butter at medium speed with an electric mixer until smooth. Add eggs and next 6 ingredients, beating well. Pour mixture evenly into each piecrust.
Step 3
Bake at 350° on lower oven rack for 45 to 50 minutes or until set. Garnish, if desired.
**Notes**: They use lemon extract here, but I’m a big fan of orange in my sweet potato pie. Use 1 tbs of orange zest for a nice boost of flavor. Also, a couple of tablespoons of bourbon will do wonders!
Another thing is the sugar issue–if you’re more a fan of brown sugar, as I am, consider swapping. You can use half brown and half white, or you can use all brown. If you prefer a pie that is less sweet you can cut the sugar a little–this is a recipe that will stand up to a bit of tinkering, so if you cut it to 3/4 cup it will be fine.
