**Egyptian Kahk Cookies**
**Dough**
3 cups flour
3 tbsp toasted sesame seeds
1 tbsp sugar
1/2 tsp cinnamon
1 tsp instant yeast
salt, to taste
1 cup ghee
1/3 cup warm water
**Pistachio Filling**
1 tbsp ghee
1 tbsp flour
1 tsp sesame seeds
1/4 cup honey
1/2 cup pistachios
powdered sugar, for dusting
**Preparation**
1. First, prepare the dough
2. Mix flour, toasted sesame seeds, sugar, cinnamon, instant yeast, salt in a large bowl to evenly distribute ingredient
2. Add ghee and warm water to the dry mix and beat with a whisk attachment in your mixer until combined
3. Cover the dough with plastic to rest for 1 hour
4. Second, create the pistachio filling
5. Combine ghee and flour over medium heat until mixture smells very nutty, 30 – 60 seconds
6. Add sesame seeds and honey and continue stirring until thick and the mixture develops a caramel-like color
7. Remove from the heat and add the pistachios
8. Let the pistachio filling mixture cool for 10 minutes
9. Roll the pistachio filling mixture into small quarter size balls
10. Roll the rested dough into golf ball size balls and place pistachio filling balls into the dough balls
11. Place combined cookies onto a parchment-lined baking sheet
12. Optionally, decorate the tops of the cookies by pressing a fork down in a grid pattern
13. Bake cookies at 375f (190c) for 18-20 minutes
14. Let cookies cool and dust with powdered sugar for presentation
15. Enjoy with English breakfast tea or coffee
