This Italian sausage pasta came together in about 25 minutes (or as long as it takes to boil pasta) using basic ingredients from the pantry and fridge. Perfect for a quick weeknight meal as it doesn’t take long to make great tasting food from scratch!

# Creamy Italian Sausage Pasta:
**Ingredients (4 servings):**
* 2 large fresh spicy Italian Sausage links
* 1 clove garlic
* 1/4 cooking onion
* 1/2 carrot
* 1 TBSP fresh rosemary, minced
* 32 oz can crushed tomatoes
* 4 basil leaves, chiffonade
* salt & pepper to taste
* 1 egg
* 1/2 cup ricotta
* 2 TBSP freshly grated Parmesan
* 12 oz dry pasta of your choice
**Method:**
Prepare a large pot of boil water. Add 1 TBSP of salt and pour in pasta. Cook until al dente.
Remove fresh sausage from the casing. Brown the sausage in a pan over medium heat. Remove the sausage from the pan and drain half of the fat.
Prepare the soffritto in a food processor by pulsing the onion, carrot & garlic clove (finely mince if no food processor). Add the soffritto and a dash of salt to the pan and saute for 3-4 minutes. Add in the rosemary and saute for 1 more minute.
Stir in the crushed tomatoes and bring to a simmer for 8-10 minutes. Turn to low and stir in the basil leaves. Add the sausage back to the sauce.
Prepare the cheese mixture. Mix the egg, ricotta, and Parmesan in a bowl until well combined. Pour half the mixture into the sauce and reserve the other half for topping.
Drain the boiled pasta. In the pasta pot, add the pasta and sauce. Stir to combine.
Transfer to individual bowls. For serving, top with the reserved cheese mixture, basil and Parmesan.
