Channa Masala / Chole Masala is a very popular Indian vegetarian recipe in which the chickpeas are curried in a tangy and spicy sauce. It is best served with Bhaturas ,chapathi, pooris or even rice
**Ingredients:**
* 2 cups chickpeas soaked in water overnight
* 175g onion
* 125g tomato
* cilatro choppwd
* salt and sugar as per taste
* red chili -1/2 tbsp
* turmeric -1/2 tbsp
* kasoori methi / dried fenugreek leaves -1/2 tbsp
* garam masala -1/2 tbsp
* kashmiri red chili powder -1/2 tbsp
* ginger paste -1tbsp
* garlic paste -1 tbsp
* Oil – 4 tbsp
* tomato sauce – 3tbsp
* Baking soda – 1 pinch
**Directions:**
* Boil water in a pressure cooker, enough to submerge the chickpeas in it.
* Add 1/2 tbsp salt and 1 pinch baking soda
* Pressure cook the chole for 6-7 mins (the cooker whistles twice)
* Let the steam subside on its own. set aside
* Heat the oil. Fry the onions until they start to turn brown.
* Add the tomatoes. Cook for a minute
* Add 1/2 tsp salt,ginger and garlic paste, turmeric, red chili, Kashmiri Red Chili powder and 1/2 tbsp sugar
* Fry the spices for 2-3 mins
* Add some water and cook for another minute.
* Now mix in the tomato sauce and cook for one more minute
* Add the chickpeas and the water. Gently mix it in
* Bring to a boil. Finally add the kasoori methi, garam masala and chopped cilantro
* mix nicely and serve !
