This one ended up delicious, and was pretty easy to make. The only problem you might have is finding pancetta; if you can’t find any, an equal amount of regular bacon will do.

* 1 cup smoked pancetta, cubed (approximately 6 ounces)
* 2 tablespoon diced shallot
* 1 teaspoon diced garlic
* 1/4 cup dry white wine
* 1/2 cup frozen peas
* 1/2 cup sliced mushrooms
* 1/4 cup heavy cream
* 1/4 cup unsalted vegetable stock
* 1/2 teaspoon chicken base
* 1 tablespoon cream cheese
* 1 egg beaten
* 1/2 cup Italian bread crumbs
* 10-12 ounces chicken breast
* 2 servings pasta (about 4 ounces raw)
Cook your pasta according to the package instructions. As it will be tossed in a hot sauce this can be done ahead of time or at any point in the cooking process.
In a skillet, heat your pancetta over a medium flame. Mine was smoked so already ‘cooked’, but if whether you’re using smoked or raw you’ll want to cook it for 3-5 minutes to allow the fat to render and the meat to crisp a bit. Add the garlic and shallots and allow them to saute a bit in the rendered fat for few minutes, and then add the white wine. Scrap up any crispy bits from the bottom of the pan, allow the wine to reduce for a minute or so, and then add the peas, carrots, cream, veggie stock, chicken base, and cream cheese. Reduce the heat to low and allow it to simmer and thicken to a creamy consistency.
For the chicken I used small 2-3 ounce cutlets. Simply coat the chicken in the beaten egg, roll in the breadcrumbs, and then pan sear them over a medium flame for 2-3 minutes per side in a skillet with a little melted butter. Mine were thin enough cuts that the pan searing was enough to cook them through; if you’re using thicker pieces of chicken you may have to finish them in the oven (or microwave, if you’re in a hurry and don’t mind losing a little bit of the crispness).
Once everything is ready to go, toss the cooked pasta with the sauce (let it sit over a low flame for a minute or two to warm if your pasta is cold), plate it, and top with your chicken. Enjoy!
