This is a simple [recipe for homemade Roasted Red Pepper Tomato Soup](https://spicecravings.com/roasted-red-pepper-tomato-soup):

1 tbsp olive oil, 1 medium onion chopped, 2 tsp garlic cloves crushed, 3 tsp ginger
3 medium tomatoes, 2 roasted red peppers, 2 carrots, 3 cups of water
1.5 tsp salt, 1/2 tsp black pepper, 2 tsp italian seasoning, 1/2 tsp red pepper flakes, 1 tsp paprika, 1/2 tsp cumin
2 tsp balsamic vinegar, 1/2 tsp cumin, 1 tsp agave
**Instant pot recipe:**
1. Turn instant pot on to Saute mode. Saute 1 tbsp olive oil, 1 chopped onion, 2 tsp crushed garlic, 3 tsp ginger, for 1 min.
2. Turn saute mode off in instant pot. Add 3 tomatoes, chopped, 2 roasted red peppers (1 jar), 2 chopped carrots, with 1/2 tsp each cumin, black pepper, red pepper flakes, 1.5 tsp salt, 2 tsp Italian seasoning, 1 tsp paprika, with 3 cups water.
3. Pressure cook on Soup mode for 6 mins, and then manual pressure release. Blend soup using an immersion blender, till smooth.
4. Add 2 tsp balsamic vinegar, 1/2 tsp ground cumin, and more salt per taste. You can optionally add 1 tsp agave.
**Stovetop recipe:**
Start in saucepan on medium heat. Follow steps 1 & 2, but add one extra cup of water. Simmer on medium heat for 15 minutes / till carrots are are tender. Then follow step 3 & 4 as above, use immersion blender and add balsamic vinegar & cumin.
