Dahi Vada (Also known as Dahi Bhalla) is a very popular Indian Snack. The Vada is made from Split black Gram (black lentils) and then soaked in water and served with Yogurt, tamarind chutney and roasted cumin powder. I am trying my best to describe the recipe and the process here. Let me know what you think !

# Dahi Vada Recipe
# Make the roasted cumin powder:
* Roasted Cumin Seeds (Jeera) on a pan and let it cool.
* Grind the Roasted cumin into a powder in a blender

# Preparing the tamarind Chutney (Syrup) :
* Soak some tamarind (abput 50 gms) in water overnight.
* Mash the tamarind with your fingers, freeing as much of the pulp as possible from the fiber.
* Pour the mashed mixture and its liquid into a strainer placed over an empty bowl
* Firmly press down on the pulp with the spoon until nothing but seeds and fiber are left
* Discard the remaining contents of the strainer once the pulp is extracted
* Add 2 cups of water to the pulp
* Add the tamarind pulp and water to a pot.Bring to a boil
* Add Half tbsp Salt,Half Cup Sugar and Half tbsp Red Chili Powder
* Stir nicely and let it boil until the syrup becomes thick
* Add 1 tbsp Roasted Cumin Powder
* Set aside once it reaches a syrup consistency

# Preparing the Vada:
**Ingredients:**
* Urad Daal (Split Black Gram/ Black Lentil)
* Raw cashew and raisins – a handful
* Ginger (2 inch cube) chopped
* Green Chili – 2
* Salt
* Roasted Cumin Powder – 1/2 tbsp
* Baking Soda – 1/2 tsp
* Heeng (Asafoetida) – 1+1 tsp
**Directions :**
* Soak 300 gms Urad Daal (Split Black gram) in water overnight
* Blend some daal into a thick paste. Add a little water if required to make the batter and transfer to a mixing bowl.
* To the batter, add 1 tsp Salt,Chopped Green Chili,Chopped Ginger, Roasted Cumin powder (Jeera), Baking Soda and 1 tsp Heeng
* Mix all the ingredients nicely.
* In a seprate big bowl, take some water and mix 1 tsp Heeng (Asafoetia) in it.
* Heat Oil in a deep frying pot
* Take some of the batter on your palm. Place a couple of raisins and cashew in it. Cover with some more batter and transfer to hot oil (like a stuffed lentil ball).
* Fry one side until its nice and crispy golden brown. Flip and fry the other side.
* Repeat and Fry all the vadas frying multiple at a time in the pot.
* Soak the fried vadas in the asafoetida mixed water for a few mins

# Prepare to serve
**Ingredients :**
* Yogurt
* Salt
* Sugar
* Chopped Cilantro
* roast cumin powder
* Red chili powder
* Bhujia Sev (Indian Snack)
**Directions:**
* Squeeze the excess water and transfer vadas to a serving plate
* Take some yogurt. Add 1/4 tsp salt and 1 tsp sugar.
* Add a little bit of water if yogurt is too thick. Mix evenly with a spoon
* Pour some of the yogurt mix on the vadas. Drizzle some of the tamarind chutney (syrup) on top.
* Sprinkle some roast cumin powder, Red Chili Powder and finally, some chopped cilantro
* (Optional) Top with some Bhujia Sev
