This simple charred vegetable udon stir-fry is the perfect vegetarian dinner option packed with flavor from ginger, garlic, and charred vegetables.
If you can’t find udon noodles, you can replace with soba, lo mein noodles, or even linguine if you’re in a pinch!

#Ingredients for Simple Charred Vegetable Udon Stir-Fry
16 ounces dry udon noodles
1 pound fresh broccoli
2 red bell peppers
1 medium red onion
Salt and pepper to taste
2 tablespoons oil
5 scallions
SAUCE
3 tablespoons soy sauce
2 tablespoons sesame oil
1 small hot pepper (such as Thai chili or red Fresno)
2” piece of ginger
5 garlic cloves
#Method
**Prepare Ingredients:**
Bring a large pot of salted water to a boil and cook the udon according to package instructions, about 8-10 minutes. Drain and rinse. Cut the broccoli crowns from the stalks. Cut the crowns into florets and thinly slice the stalks. Trim and deseed the red bell pepper and slice intro strips. Peel the red onion and slice into thin wedges. Trim the scallions and slice into thirds.
**Prepare the Sauce:**
Mince the hot pepper. Peel and mince the ginger and garlic. In a small bowl, combine all the sauce ingredients and whisk until well-combined. Set aside.
**Cook the Vegetables:**
Heat 1 tablespoon of the oil in a large skillet over medium-high heat. First, add the red onion and bell pepper and cook, stirring frequently, until beginning to soften, about 6-9 minutes. Next, add the broccoli florets and sliced stalks and cook for 4-5 minutes or until bright green and just beginning to soften. Finally, add the scallions and toss to combine. Season with salt and pepper. Place under the broiler for 4-5 minutes or until the vegetables begin to char. (Note: You can also stir-fry the vegetables until charred, about 6-8 minutes, if desired; I just preferred to place under a flame!) Transfer the vegetables to a bowl.
**Prepare the Noodles:**
Heat the remaining 1 tablespoon of oil in the skillet over high until very hot and shimmering. Add the noodles and then immediately add the sauce. Toss to combine and coat the noodles.
**Finish the Udon Stir-Fry:**
Add the cooked vegetables to the skillet and toss until coated with sauce. Turn off the heat.
**To Serve:**
Divide the vegetable udon stir-fry between bowls and enjoy!
