This is a very simple recipe and can be prepared in a relatively short time. Good for breakfast, lunch, snacks or practically whenever you want to eat 🙂
Reduce the pepper/green chili and you have a Kids Lunch for school.
There is no quantity of ingredients because it all depends on how much you prefer.

Ingredients:
* Mashed potatoes
* Chopped Red Onions
* Hard Boiled Eggs – Sliced
* Salt
* Himalayan Rock Salt
* Lime Juice
* Chopped Cilantro
* Chopped Green Chili
* Fresh Crushed Black Pepper
* Butter

Directions:
* In a bowl, mix all the ingredients except the butter and eggs.
* Butter a slice of bread and put some of the potato mix on it (as much as you want).
* Put the slices of egg on top.
* Cover with another slice of bread and press down to hold them toghether.
* Butter the outer side of one bread of the sandwich.
* Heat a pan and transfer the sandwich buttered side down on the pan and toast it on medium heat until your desired level.
* Butter the other outer side and flip. Toast .
* Cut into half and enjoy !
