I am back with another Indian chicken curry that I feel do not get the amount of love it deserves .. because… butter chicken 🙂
Chicken Bharta is a very popular Dhaba Food (Highway roadside eateries) and usually served with Tandoori Roti or Naan.
Also, usually this dish is prepared with boiled shredded chicken. But I used marinaded chicken pieces instead and break them into smaller pieces while cooking as I have seen it enhances the taste.

# Recipe:
# Chicken marinade :
Ingredients:
* Chicken breast 500 grams cut into small pieces
* Ginger paste – 1 tbsp
* Garlic paste – 1 tbsp
* Turmeric powder – 1/2 tbsp
* Salt – 1 tsp
* Sugar – 1/2 tbsp
* Red chili powder – 1/2 tbsp
* Cilantro chopped – a handful
Marinade the chicked with the above ingredients overnight or atlest 2-3 hours
# Preparing the curry:
Ingredients:
* Cashew : 10-12 pieces
* Raisins : 10-12 pieces (soaked in water)
* Whole spices : 2-3 green cardamom, 2 cloves , 1/2 stick cinnamon
* Onion : 1 medium chopped
* Tomato : 1 medium chopped
* Salt : As per taste
* Kashmiri red Chili Powder (Degi mirch) – 1/2 tbsp
* Cumin powder : 1/2 tbsp
* Corriander powder ” 1/2 tbsp
* Yogurt : 2 tbsp blended
* Cooking oil
* Butter – 1/5 th stick
* Single cream – 3 tbsp
Instructions:
* Make a paste of the cashews and raisins in a blender. Keep aside
* Heat some oil in a wok. Add whole spices and fry for 30 secs
* Add the chopped onion. Fry until it turns golden brown
* Add the chopped tomato and some salt to cook the tomato.
* When the tomato is soft, add the marinaded chicken and the excess marinade. Cover and cook the chicken stirring in between for 10 mins
* Add the kasmiri red chili , jeera and corriander powder. Mix well and fry the spices for 5 mins on medium heat.
* Break the chicken into smaller pieces using the spatula (optional).
* Add the cashew and raisin paste and the yogurt blend.Mix everything nicely and cover. Cook for 3 mins on medium heat.
* Remove the cover and cook until oil separates.
* Add 1/2 tbsp homemade garam masala homemade add 1 cup warm water and bring to a boil.
* Add the single cream and butter. Mix well , turn off gas and let it rest for 5 mins.
* Chicken Bharta is now ready to be served
