**Singapore Style Stir Fry Rice Noodles**
This is our version of Singapore style Rice noodles. It contains eggs and shrimps. You can however definitely add any meat of your choice or any other ingredients, sauce as you like !!! Cooking has no boundaries. I hope you all enjoy this recipe.

**Ingredients:**
* Rice Vermicelli – 250 gms
* Green, Red, Yellow Bell pepper – 1/2 of each medium sized
* Green Chili – 2-3 chopped
* Ginger finely chopped – about 40 gms
* Garlic finely chopped – 5-6 large cloves
* Red Onion – 1 large
* Cabbage – 100 gms shredded
* Scallions/Green Onion – 2-3 finely chopped
* Small Shrimps : 10 – 15 cleaned
* Eggs – 3 large
* Soya sauce – 1 tbsp
* Tomato sauce – 1 tbsp
* Sriracha sauce – 1/2 tbsp
**Method:**
* Boil water in a pot and add 1 tsp salt and 1 tbsp oil. Tip: The oil prevents the noodles from sticking to each other
* Cook the rice vermicelli until its done to about 90% of your desired softness
* Strain the water and keep aside
* Add some salt and whisk the eggs. Heat some oil and scramble the eggs. Keep aside. Do not overcook them. You want them to be soft
* Heat 2 tbsp oil. Fry the ginger and garlic for about 30 secs
* Add the onions and cook for a minute. Then add the shrimps, green chili, cabbage and fry for another couple of minutes
* Add salt as per taste
* Add all the bell peppers and fry on high heat for just about a minute .You would want the peppers to remain crunchy
* Mix all the sauces and stir.
* Add the rice noodles and toss for a couple of mins mixing it well with the veggies and sauce
* Mix the scrambled eggs to the noodles.
* Finish off with adding the green onions
* Serve hot !
