Chicken Biryani is a very popular dish across the world. There are various different ways to cook biryani . The recipe I am sharing here is one of those ways we prepare in the state of West Bengal, India. This recipe calls for potatoes and eggs along with chicken biryani. I hope you all enjoy the recipe.

# Marinde the chicken:
* Chicken Breast – 600 gms (cut into bigger size pieces)
* Ginger – 50 gms
* Garlic 10 large cloves
* Salt – 2 tsp
* Turmeric – 1/2 tbsp
* Red Chilli Powder – 1/2 tbsp
* Sugar – 1 tsp
* Yogurt – 2 tbsp
* Cooking Oil – 1 tbsp
Mix all the ingredients. Marinade overnight if possible or at-least for 2-3 hours
# Fried Red Onions, potatoes and eggs:
* 3 Red Onions – sliced into half rings and separated
* 3 medium potatoes cut into large pieces
* 6 large eggs hardboiled and peeled
* All purpose flour (Maida)
**Instructions:**
* Take some all purpose flour onto a plate.Transfer the onions to the flour and coat them evenly
* Heat oil in a cooking pot.Transfer the coated onions and Fry until they are crispy and golden brown. Drain excess oil and set aside
* Next transfer the potatoes to the heated oil.Add 1 tsp salt. Cover and cook the potatoes for a couple of mins.Fry all sides evenly till golden brown.Set aside when done
* Lastly, Fry the boiled eggs lightly on all sides. Set aside.

# Prep the rice:
**Ingredients:**
* Basmati Rice – 3 cups
* Water – 5 and half cups
Thoroughly wash the basmati rice until the water runs clean. Then keep soaked in 5 and half cups of water for at least 30 mins
# Prepare the biryani :
**Ingredients :**
* Cooking oil – 1 tbsp
* Ghee (Clarified Butter) – 2 tbsp
* Whole spices : 1 small stick cinnamon, 2-3 cloves and cardamom
* Red onions – 2 chopped
* Rose water 1 tsp + 1/2 tbsp
* Nutmeg and Mace powder – 1/2 tbsp
* Garam Masala Powder (Cinnamon, cardamom and cloves) – 3/4th tbsp
* Kewra water (Pandanis/Screw pine) – 1/2 tbsp
* Biryani esence – 2-3 drops
* Salt as per taste
**Instructions:**
* Heat the oil and ghee. Fry the whole spices for 30 secs.
* Add the red onions and cook until they turn light brown
* Transfer the marinaded chicken and the excess marinade. Mix well. Cover and cook for 15 mins on low flame
* Add the slightly fried potatoes and 1 tsp rose water. Mix, Cover and cook on low heat for another 15 mins or until the oils starts to separate.
* Add the soaked rice and water, nutmeg and mace powder, 1/2 tbsp rose water, garam masala, kewra water, biryani essence and salt.
* Give it a nice stir. Cover and cook on low flame
* When the rice is half done, add the eggs. Cover and cook. Remove the eggs once the rice is cooked.
* In a large bowl, transfer about one third of the biryani .Layer with one third of the crispy fried onion
* Repeat the above step with the remaining biryani and fried onions creating alternate layers
* Add the egggs on top
* Serve hot !
