Nando’s Spicy Rice Recipe by Scrummy!
**Ingredients:**
* 2 Cups of Rice
* 4 Cups of boiling water
* 1/2 an Onion (finely chopped)
* 1/2 Red Bell Pepper
* 2 Chicken Stock Cubes
* 1/2 tsp Cumin
* 1/2 tsp Paprika
* 1/2 tsp Turmeric
* Chilli powder – to taste
* Frozen Peas (handful)
**Instructions**
1. To a frying pan, add oil, onion, red bell pepper, one chicken stock cube, cumin, and paprika. Stir fry on high for 3-5 mins till aromatic.
2. Add 2 cups of rice (pre-rinsed in water) , 4 cups of boiling water, chicken stock cube & turmeric and stir and boil for 2-4 minutes covered.
3. Add peas and chilli powder, stir before covering the pan with a lid tightly. Let the rice cook on low heat for about 12-25 mins depending on your altitude, rice cooks the fastest at sea level and takes much longer to cook at higher elevations. Add a bit more boiling water if you need to cook the rice longer so it doesn’t burn at the bottom of the pot. Remove from heat and let simmer and cool, still covered, for 5 minutes.
4. Serve with freshly cracked black pepper (optional) & enjoy!
