Green Shakshuka
Ingredients:
• 20g butter (split in half)
• 1 leek, peeled and cleaned
• 200g baby spinach
• 2 large cloves of garlic, chopped
• 1 tbsp cumin seeds
• Bunch of parsley, roughly chopped
• Bunch of coriander, roughly chopped
• Sprig of mint, roughly chopped
• 4 eggs
• 1 rasher bacon
• 100g mushrooms
• 100g frozen peas
• 1/2 avocado
• Tzatziki
• Dried chilli (optional garnish)
Method:
- Heat frying pan, once hot add 10g butter. Chop bacon and mushrooms and sautes until browned
- Chop leek and add to pan for ~4 minutes. Add salt and remaining 10g butter. Add spinach and wilt.
- Add peas, garlic, cumin, and all herbs. Stir until fragrant. Season to your own preference.
- Make spaces for your eggs. Add eggs and cover for ~5 mins or until desired egg “doneness” (I like runny yolks!).
- Slice avocado and add to pan. Add spoons of tzatziki. Sprinkle dried chilli.
You can eat with cutlery or scoop out with some flatbread, enjoy!
