Satin is like mousse but with only egg whites, not whole eggs. It is generally made with heavy cream but I wanted to experiment with cashew milk (25 calories per cup) to keep the calorie count down. They came out good, after a stressful night of suspense! They could have been firmer so I might experiment with adding gelatin or agar. Though not as firm as mousse, as you can see in the photo, it’s definitely set enough to make a yummy snack, it’s like a soft and light pudding.
INGREDIENTS
- 2 3.5oz bars Lindt excellence 78% chocolate, broken into small pieces
- 42g Lily’s dark chocolate sugar free baking chips (I just had this as remnants from another recipe but you could skip it or add more regular chocolate)
- 2c unsweetened cashew-almond milk
- 3 egg whites (use super organic fancy ones, because these do not get cooked*)
- 1t vanilla extract
- 0.5t cream of tartar
- 0.5c swerve confectioners sugar substitute, sifted
PREPARATION
Pour milk into a large mixing bowl and microwave 3 min. working rapidly, mix chocolate in to melt the chocolate until you have a smooth and glossy texture, about 2 minutes. Let cool while you do the next steps (but should still be a little warm so don’t wait hours).
In the bowl of a stand mixer, whisk the egg whites at the highest speed until soft peaks form. Add vanilla, cream of tartar and the sugar 1 tablespoon at a time and whisk at the highest speed until satiny and stiff peaks form, about 2 minutes more. The mixture should be airy, glossy, and stiff like a meringue.
Add about one-quarter of the egg white mixture to the cooled chocolate mixture to lighten it. Whisk gently until no streaks of white remain. Spoon the rest of the whipped egg white on top of the mixture in the bowl. Fold in the whipped egg white by hand until incorporated.
Pour into ramekins and chill at least 6 hours or until set. Top with a sprinkle of sea salt.
Made 13 half-cup servings (I had thought it would be 6 but I severely underestimated how much volume it would get! Hence the mismatched containers.) at 111 calories / 8g carbs/ 9g fat / 3g protein apiece. For comparison, the lowfat vanilla yogurt I used for snacks generally (Cabot) per half cup was 120 calories, 18g carbs/ 2g fat/ 9g protein and 15.5g sugar.
