lazercheesecake: I love it how it’s festive without actually containing any pumpkins! Like a stuffed poblano pepper with a modern twist.
There are a few ways to really bring out the flavor of the dish while retaining its fun. First brown your ground beef in the pan before introducing any vegetables. You may have noticed that the instructions include draining excess moisture after cooking off the meat. You’re losing so much flavor from the juices and spices in there. This is symptomatic of meat cooked at low temperatures which leads to steamed meat which is rather bland and can get very dry. Meat first and don’t crowd; you should hear the sizzling when you put it in. If you don’t wait, heat the pan longer. In addition, the maillard reaction adds so much depth, which you will need because of the added chicken stock and steaming the rice and veggies in the pepper. Let it happen.
Don’t be afraid to add a little more spice in there. Jalapenos, Cayenne, or other spices will give it a more mexican flair to the dish. Allspice and nutmeg will give you a nuttier, more fall/holiday-esque vide to it. Paprika, chorizo, and oregano for a more Spanish kick. Olive oil is good to add too, but don’t use it to cook. It has a low smoke point and can burn easily leaving a bitter taste in your food at the temperatures you should be cooking.
Other than that, this looks like a wonderful dish worth cooking up. Happy Fall season everyone!

**INGREDIENTS**
* 4 orange bell peppers
* extra-virgin olive oil
* kosher salt
* Freshly ground black pepper
* 1 Onion, finely chopped
* 2 garlic cloves, minced
* 2 tsp. chili powder
* 1 lb. ground beef
* 1 c. cooked white rice
* 1 c. chicken stock, divided
* 1 (15 oz) can fire-roasted tomatoes
* 1 c. shredded Monterey Jack, divided
**DIRECTIONS**
* Preheat oven to 350 degrees F.
* Cut off (and reserve) the top of each pepper. Remove and discard the cores and seeds. Using a sharp paring knife, carve a Jack O’Lantern face into each pepper. Drizzle the inside of each pepper with olive oil and season generously with salt and pepper. Place the peppers upright in a large baking dish along with the pepper tops.
* Heat a tablespoon of olive oil in a large nonstick skillet. Sauté onions until soft, about 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add beef and sauté until browned and cooked through, breaking up the meat with a wooden spoon. Turn off the heat and drain the fat.
* Return skillet to stovetop over medium heat. Season with salt and pepper to taste and stir in the chili powder. Add the fire-roasted tomatoes, 1/2 cup chicken stock, cooked rice and 3/4 cup of cheese. Stir until the mixture is evenly combined.
* Divide rice and beef mixture between the hollowed out peppers. Top with cheese.
* Pour remaining 1/2 cup chicken stock into pan. Cover with foil and bake for about 30 minutes. Remove the foil and cook for another 10-15 minutes, until the peppers are tender and the cheese is melted.
bheklilr: I made this once but filled the peppers with spaghetti. The kids loved it, and I’m being asked to make it again this year by my 5yo. It’s actually fairly easy to do the peppers, and you can prep them pretty far in advance.

2. remove meat, blot out some fat
3. onions + salt, sautee
4. garlic for 30 sec, then deglaze with a little stock
5. add beef back in, boil off most of the liquid real quick, season
6. add the rest
and this is how you keep the flavour in there. otherwise you either burn the garlic or just boil the meat. both of those options suck.

phyzicks: It might just be me but… ANYTIME I see a recipe video and they use THAT many Onions I instantly close out of it and forget about it, cause that’s fucking nasty… Some is ok but when you use almost as much onions as beef, it usually screams “I have no ability in judging taste so i make up for it with a ton of onions”… Please get real and accept that Onions are not that good and actually do not add anything worthwhile to a dish.
