**Ingredients:**
1/4 cup extra-virgin olive oil
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground black pepper
½ teaspoon ground coriander
1 lime, juiced
1 pound skinless, boneless chicken breast, sliced into thin ½-inch strips
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 yellow onion, thinly sliced
tortillas, salsa, guacamole, sour cream, and cilantro, as desired
**Preparation:**
Preheat oven to 400°F (205°C).
Beat oil, paprika, cumin, salt, garlic powder, pepper, coriander, and lime juice together in a large bowl with a whisk until smooth; add chicken, red bell pepper, yellow bell pepper, and onion and toss to coat. Spread chicken and vegetables onto a baking sheet.
Roast in preheated oven until chicken is cooked and the veggies are soft, 13 to 15 minutes. Serve with toasted tortillas, cheese, sour cream, and guacamole.

_Silence_DoGood_: Why not put the vegetables and the chicken in a bowl, pour the sauce, and mix them properly before placing them on the pan? Incorporating all ingredients on the pan seems inefficient, IMHO.
