Facerless: **Ingredients**
*Chicken*
2 lbs boneless/skineless chicken
1/2 Tblspn Paprika, Salt, Garlic Powder, Chili Powder
1 Tspn Pepper, Oregano, Thyme
2 Tblspn olive oil
*Blackbean Salsa*
1/2 Medium sized yellow onion (Diced)
4 Cloves of Garlic (Minced)
~14oz of diced tomatoes (1 can or 2 medium tomatoes)
1 can of black beans (rinsed)
1 Tblspn Paprika, Salt, Pepper, Cumin
Spring onions sliced for garnish
2 Tblspn olive oil
(Optional 1/2 Tblspn of Cayenne)
**Directions**
1. Combine herbs and spices for the chicken in a bowl, coat the chicken liberally. Cover and set aside, this can be done the night before
2. In a large skillet, bring 2 Tablespoons of oilve oil to medium heat and add the diced onion. Cook until it starts to change color and add the garlic
3. When the garlic starts to brown, add the tomatoes and the herbs/spices for the salsa. Cook until the liquid reduces by half
4. Add your black beans, a little more salt, and combine. Cook until the mixture reduces to desired thickness, then place in a bowl for serving
5. In the same skillet, heat an additional 2 Tablespoons of olive oil to medium and add the chicken.
6. Leave it alone! Do not flip or move it until it’s turned white half way up the sides of the breast, we want a nice blackened sear.
7. Once you flip, squeeze the juice of one lime over the chicken and finish cooking
8. Plate the chicken topped with salsa, garnish with the sping onion. Serve with a starchy side, I went with seasoned rice this time
