Give me your best lentil recipes

I want to eat more lentils and legumes in place of meat, but I don’t know very many easy/tasty recipes for them, so I end up not bothering.

chipcrazy: In South India, the staple food is sambar mixed with rice. It’s a lentil soup that features one or more vegetables. You can make carrot sambar, brinjal sambar, potato sambar and more! You can either eat it like soup or if you want to try the traditional way mix it with boiled rice.

jilleebean7: Soup!!!! And the good thing about soup you can almost throw anything you want in it. With lentils I would use beef stock, onions, carrots, celery, and cabbage. I also did a soup once with just beef stock, lentils, split peas, and navy beans (onions of course) was pretty damn delicious.

i bought beluga lentils one time from the grocery store instead of french lentils by accident, and this has quickly become one of my favorite legume dishes. I’ve also seen lentils prepared like black refried beans, but I haven’t tried it myself.
if you’re trying to eat more legumes instead of meat, try some mixed legume soup mixes (Bob’s Mill makes some). It’s an easy way to try something new, while still being convenient.

this is the recipe on the back of Bartlolini Farmer’s Soup’s packaging, but I haven’t found that particular soup mix since moving, but you can sub any mixed legumes.
