Ingredients
200 gms of Paneer(Indian Cottage Cheese) cut into cubes.
3 tablespoon of Onion Paste
1 tablespoon of Ginger Paste
1 tablespoon of Garlic Paste
1 teaspoon of Cumin powder
1/2 teaspoon of Red chilli Powder
Garam Masala Powder
1/2 cup of Coconut Milk
Sugar
Salt
Sunflower/Rice bran oil
2-3 bay leaves
Green Chillies
Recipe
Heat the pan.Add 2 tablespoon of Sunflower/Rice Bran oil.
When the oil gets heated up we start frying the Paneer Cubes first.
Fry them until they turn slightly golden and keep them aside.
Add 2 tablespoon of Sunflower/Rice Bran oil.
Add 2-3 bay leaves
Add 3 tablespoon of Onion Paste.
We let it cook for sometime so that the onions can caramelize a little.
Add 1 tablespoon of Ginger Paste.
Add 1 tablespoon of Garlic Paste.
Mix it well for 2-3 mins.
Add 1 and 1/2 teaspoons of sugar.
Add 1 teaspoon of salt.
Add 1/2 teaspoon of Red chilli Powder.
Add 1 teaspoon of Cumin powder.
Mix it well for 2-3 mins.
Add 2 tablespoons of Yogurt diluted with water.
Mix it well for 2-3 mins in low flame.
Add 1/2 cup of Coconut Milk.
To extract coconut milk
put shredded coconut in a blender and put warm water.
Blend on high for some several minutes until the mixture is thick and creamy.
Pour your mixture on the sieve in parts to filter the coconut milk.
Mix it well for 2-3 mins.
Add 300-350 mls of water.
We wait for the water to start boiling.
After the water has started to boil, we add the fried cubes of Paneer in the gravy.
Put the flame to high and let it cook for 5-10 mins so that the water gets dried up a little.
Add 1/2 teaspoons of Garam Masala Powder and the green chilli pieces
Mix it well and let it cook for 5 mins in low flame by covering the lid for the aroma to set in.
Panner Bahar/Paneer with Coconut milk is ready to be served.
Jellykapop: OK so I had an Indian roommate for a year, I HATED the food she made. The amount of curry she used dyed the walls yellow in the kitchen and made the whole apartment permanently smell like curry. I had to leave whenever she cooked because the fumes were so intense they made my nose and eyes burn and water. BUT- she did make homemade cottage cheese one time when my parents came to visit (my dad loves trying different foods) and it was the most amazing cheese I’ve ever had. To this day I think about trying to make it. Drool. She made some bread that was pretty good too. Naan? Yeah. That was some good shiznit.

travelingattorney: Question and a comment. Any reason to use shredded coconut and water in lieu of a quality canned coconut milk? Secondly, it looks delicious but – as a suggestion – if you wiped the splatter from the plate it would look restaurant quality. Happy cooking!
