* 1 Tbsp. olive oil
* 1/2 cup onion, finely diced
* 2 cloves garlic, minced
* 4 oz. extra firm tofu, drained
* 3 Tbsp. water
* 1 Tbsp. ground flax seed
* 1 cup cooked quinoa
* 1/3 cup canned corn, drained and rinsed
* 1/3 cup gluten-free or regular panko breadcrumbs (I used some made by Ian’s)
* 3 tbsp. green onions, chopped
* 1/2 tsp. salt
* 1/4 tsp. ground black pepper
### Instructions
1. To a pan over medium-high heat, add oil, onion, and garlic.
2. Sauté a couple of minutes. Remove from the heat and set to the side.
3. To a blender, add tofu, water, and ground flax seed. Blend until smooth.
4. Transfer to a bowl, and add cooked quinoa, corn, gluten-free panko, green onions, the sautéed onions, and garlic, salt, and pepper. Stir well. Shape into patties.
5. Carefully transfer to a greased pan over medium heat. Cook each side until browned—flipping only once (about 4-6 minutes each side).
6. Serve over greens, or on a bun, or with a dipping sauce.
