For the wings:
1/4 c. extra-virgin olive oil
Juice of 2 limes
1 tsp. garlic powder
1 tsp. ground cumin
1/2 tsp. smoked paprika
3 lb. chicken wings
kosher salt
Freshly ground black pepper
For the glaze:
4 tbsp. butter
2 tbsp. honey
1 tbsp. Hot sauce
Juice of 1 lime
2 tbsp. Chopped cilantro
**Directions**
1. In a large bowl, whisk together olive oil, lime juice, garlic powder, cumin, and paprika. Add wings and toss until coated. Cover bowl tightly with plastic wrap and refrigerate for at least 1 hour and up to 4 hours. Drain wings and pat dry.
2. Preheat oven to 425° and line a large rimmed baking sheet with a metal rack. Season wings with salt and pepper. Bake until crispy, about 50 minutes.
3. Meanwhile, make glaze: In a small saucepan over medium heat, melt butter. Whisk in honey, hot sauce, and lime juice. Turn off heat then stir in cilantro.
4. Transfer baked wings to a clean large bowl. Pour sauce over wings then use tongs to toss wings until fully coated.
Serve warm.

selantro: Why would you salt and pepper the wings after they’re on the rack when you could just add it to the ‘sauce’…hmmm
