gregthegregest2: Adobo in the Philippines is the method of marinating meat in a mixture of vinegar, soy sauce and garlic, simmer the meat and sometimes grill or baking before serving.
They give the meat a really rich flavour.

BigSmed: My grandmother was Filipino and her Adobo was equal parts water and vinegar, half as much soy sauce, a couple bay leaves and some garlic. Just stove top cook it with what ever meat (pork and chicken are staples) until the liquid cooks down significantly.
