BoiledGoose69: If I made this I’d cook the mushrooms for a bit with olive oil then add the butter and let it sizzle for a bit before adding the cream etc.
Does separating it out like this make much of a difference? In my head my way makes it more “mushroomey”

**INGREDIENTS**
* 4 boneless, skinless chicken breasts, thinly sliced
* 2 Tablespoons Olive oil
* Salt Pepper
* 8 ounces sliced mushrooms
* Creamy Parmesan Garlic Sauce:
* ¼ cup butter
* 2 garlic cloves, minced
* 1 tablespoon flour
* ½ cup chicken broth
* 1 cup heavy cream or half and half
* ½ cup grated parmesan cheese
* ½ teaspoon garlic powder
* ¼ teaspoon pepper
* ½ teaspoon salt
* 1 cup spinach, chopped
**INSTRUCTIONS**
1. In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center.
1. Remove chicken and set aside on a plate. Add the sliced mushrooms and cook for a few minutes until tender. Remove and set aside.
1. Add the butter and melt. Add garlic and cook until tender.
1. Whisk in the flour until it thickens. Whisk in chicken broth, heavy cream, parmesan cheese, garlic powder, pepper and salt.
1. Add the spinach and let simmer until it starts to thicken and spinach wilts.
1. Add the chicken and ,mushrooms back to the sauce and serve over pasta is desired.

HeftyJo: Heavy cream, butter, and parmesan is all you need to make a creamy alfredo sauce (with a 1 tsp of sodium citrate if you have it). No need for the bechamel and it’ll be keto friendly.

Yesrek: I just made this. It was delicious. I am going to substitute the flour with cream cheese next time. I’m also going to add more mushrooms and spinach. And chicken. It was very saucy. But awesome.
sumilkra: Genuine question : when making the sauce and starting with fresh garlic, why the hell do you add garlic powder later on? Just add more fresh garlic up front surely or does it do something else?

darn_me: I love steamed spinach as a side dish, but I don’t understand this American fascination for adding them as a token “healthy” ingredient to soo many meat and/or pasta recipes… that imho would be much better *without* spinach.
