Also I find that ground meats play better with a smaller diced potato (maybe just my preference) but just cover it – no need to get the oven going just for the eggs. No lid that fits your cast iron? Use a second pan turned upside down on top.

naking: Instead of baking it in the oven at 350 for 10 minutes or so, throw in about a tablespoon of water and put a lid on it for about 2 and 1/2 minutes, and then you will have perfect eggs sunny-side up slightly steamed on top.
