RachelScratch: What sort of taste does the vodka add exactly?
Pitta_: this is almost my recipe! no meat, instead of onion i use a shallot, as it’s slightly sweeter. i also use tomato paste instead of the canned tomatoes, as you get a deeper, more rich tomato flavor.
fry shallot+garlic, and pepper flakes until fragrant, then add tomato paste and cook until it’s a dark red, brick-y color. add vodka, stir for a minute, then add the cream.
add your pasta, a splash of cooking water, and a big knob of butter. one of my favorite pasta recipes!!
