**==========Ingredients==========**
* Oats(Regular) (ओट्स ) – 1 cup
* Grated Carrot (गाजर ) – ¼ cup
* Chopped Green Capsicum(pepper) (शिमला मिर्च ) – ¼ cup
* Grated Cauliflower (फूल गोभी ) – ¼ cup
* Chopped Spinach (पालक ) – ½ cup
* Chopped Onion (प्याज़) – ¼ cup
* Red & Yellow Capsicum (शिमला मिर्च ) – ¼ cup
* Gram Flour (बेसन) – 1/2 cup
* Olive oil (ओलिव आयल ) – 5 tablespoon
* Boiled Potatoes (उबले हुए आलू ) – 2
* Gram masala (गरम मसाला ) – 1 tablespoon
* Cumin seeds (जीरा ) -1/2 tablespoon
* Fennel seeds (सौंफ ) – 1/2 tablespoon
* Salt (नमक ) – to taste
* Fresh Grated Ginger (अदरक ) -1 tablespoon
* Mango powder(अमचूर ) – 1/4 tablespoon
* Split chickpeas (चना दाल) – 1 tablespoon
* Split Black gram (उरद दाल ) -1 tablespoon
* Water (जल ) – 3,4 tablespoon
**==========Method==========**
**=====Soaking Oats=====**
Take oats in a bowl. Sprinkle some water, mix and set aside to soak.
**=====Getting the Veggies ready=====**
a) Heat 2 tablespoon olive oil in a non-stick frying pan
b) Add Cumin seeds, Fennel seeds, Chana daal (Split chickpeas) and Urad daal (Split Black gram). Saute it for few seconds.
c) Now add grated onions, green chili, ginger and saute it until it gets translucent (for around 30 seconds)
d) Add veggies – Mixed capsicums, carrot, cauliflower and cook these for 2-3 minutes.
e) Now add dry spices to it – Salt, Garam Masala, Amchur powder (Mango powder)
f) Add spinach, mix well. Transfer to a bowl and cool.
**=====Dough making & shaping the cutlets=====**
a) Take a big bowl put that cooled veggies mixture into it.
b) Add soaked oats, Gram Flour(Besan) and grated potatoes and mix well to make dough
c) Take a small portion, and make cutlet shape (by flattening them using hands), or the shape you like.
d) Grease palms with some oil. Take a mixture and make cutlets of equal sizes.
**=====Shallow Frying=====**
a) Heat up the frying pan and brush it with oil.
b) Put cutlets and brush the upper side of the Cutlets.
c) Cook for 2,3 min (until it gets light brown) and flip the cutlets
d) And cook from another side, till it gets brown in color.
e) Your healthy and quick, shallow fried cutlets are ready to serve.
Serve with green chutney and Tomato sauce.
